Stuffed Bell Peppers / Capsicum

Stuffed Bell Peppers is a household dish. Very popular side dish is visually appealing too. This dish can be baked or pan cooked. Green bell peppers stuffed with spicy mashed potato and onion is a sure hit for lunch or dinner. Here, I am sharing this recipe with step by step instructions..



Ingredients:

Green bell peppers/ capsicum - 2
Boiled potatoes - 3 big
Onion - 1 big chopped
Ginger - 1 inch piece, chopped
Green Chillies - as per taste, chopped
Coriander seeds -1/2 tablespoons, crushed
Salt - 1.5 teaspoon
Coriander powder - 1 teaspoon
Garam Masala - 1 teaspoon
Aamchoor / dried mango powder - 1 teaspoon
Red chilly powder -1/4 teaspoon

Method:

Preheat oven at 200 degrees.

Wash bell peppers and scrap the stem side in such a way, that it can act as a lid.

Mash boiled potatoes, add chopped onion, green chillies, ginger, crushed coriander seeds. Add all dry masalas and mix properly.
Now stuff this mixture in each bell pepper only till 2/3 level.( it comes out when heated). Cover each pepper with their stem lid.


Brush lightly with oil and bake for 20 minutes at 180 degrees.

Serve hot with chapati, paratha.

Pineapple Cinnamon Cookies

After thinking a lot on what to make out of a pineapple lying in my fridge, before it gets stale, I zeroed in on cookies..You know that right now I am all for cookies, if you visit my page http://www.facebook.com/KITCHENMANIA . Yes I am trying to hone my baking skills. I tell you, these cookies will make you fall in love with baking cookies..The flavor was just awesome and the taste , lip smacking. Here, I am sharing the recipe with step by step instructions...
 
Ingredients:
All purpose flour / Maida - 200gm
Pineapple- 1 full or canned
Brown sugar-150 gms
Butter-120gms
Eggs -1
Baking powder- 1 teaspoon
Vanilla essence- 1 teaspoon
Cinnamon (powdered) -1 teaspoon
Salt - 1/ 4 teaspoon
Method:

Preheat oven at 180 degrees and line a baking tray.

Sift flour , salt, baking powder, cinnamon and keep aside.

Whisk butter and sugar, till sugar slightly dissolves.

Add eggs one by one and whisk till it gets fluffy. Add vanilla essence and mix.


Pineapple can be added in many forms, either grated or in small chunks. Well, I pureed it and reduced it by sauteing it in little butter on high flame. I did this to reduce water content.

Now, add pineapple in the egg, sugar , butter mixture. Mix.
Add flour mixture in three batches, while mixing it properly to form a sticky dough. It should neither be too hard or too soft.

Make small balls out of the dough and place them on the baking tray. Sprinkle some cinnamon over them ( optional).

Bake for 18 - 22 minutes. Cool on a wire rack.


Enjoy the spiced flavor of these fruity cookies.

Chocolate Crinkle Cookies

Mind it !!! You won't stop at few... This is the beauty and taste of these cute looking cookies. Texture like cookies and taste like brownie,  is the speciality of these cookies. A must try for all of you, baking lovers.. Here, I am sharing this easy recipe..

Ingredients :

All purpose flour / Maida - 200 gms
Cocoa powder - 100 gms.
Baking powder - 1.5 teaspoons
Powdered sugar - 200 gms
Oil - 70 ml
Salt - A pinch
Lemon zest - 1 teaspoon ( optional)
Vanilla essence - 1/2 teaspoon
Eggs - 2
Confectioner's sugar - 1 cup
 
Method:

Mix flour , cocoa powder, baking powder, lemon zest, salt,  powdered sugar and oil. You will get crumbled flour.
 
Now add egg one at a time and mix in the flour simultaneously.
 
Knead it to form a dough..It will be sticky in texture.
 
Cover the dough and refrigerate it for approx. 3 hrs or more.
Line baking tray and preheat oven at 150 degrees.
Take out cold dough and make small balls out of it. Roll in confectioners sugar generously to coat the balls completely.

Place them on the baking tray at a distance. Bake for say 15 -18 min. Cool and eat .....

Almond Cookies - Eggless

I am here baking again almost after 10 months. I am feeling so happy to share this recipe with you. Its a simple cookies recipe. Kids will love this, so as adults. Almond gives it a nice flavor and crunchiness. Here is the recipe :


Ingredients :

All purpose flour / Maida - 150 gms
Powdered sugar - 150 gms
Butter - 120 gms
Almonds -100 gms
Baking Powder - 1 teaspoon
Milk - 2-3 tablespoons


Method :

Sift flour and baking powder. Grind almonds coarsely and soak few almonds in warm water for 20 min. for garnishing.



Melt butter and whisk it with powdered sugar till sugar dissolves in it.

Add sifted flour in butter mixture and mix properly.



Add ground almond and knead like a dough. add milk if needed. Knead it.



Preheat oven at 150 degrees. Line the baking tray. Slit soaked almonds lengthwise.

Make small rounds out of the dough and flatten slightly. Stick an almond piece in the centre.

Place cookies on baking tray at adequate distance, so that they don't stick while they get baked.


Bake these cookies at 120 degrees for about 15 minutes. Take them out, let them cool.


Enjoy delicious eggless almonds cookies and store in an airtight container.

You can also sprinkle white sesame seeds for extra flavor.

Dhabe Wali Tadka Dal / Spicy Tempered Yellow Pulses

Dhabe wali Dal, the name itself explains and make you wanting to have it.. Heavily tempered Arhar / Toor dal with onions, chillies and tomatoes.. Its an easy dal, made in every household but there is something different about that roadside dhabewali dal..Hai na ?? So, here I am sharing the recipe with pics...
Ingredients:

Arhar / toor dal / Split pigeon peas- 2 cups
Onion - 1 big chopped in small pieces
Tomatoes - 2 medium chopped in small pieces
Green chillies - 2 chopped
Garlic- 4 cloves chopped
Cumin seeds - 1 tbs
Turmeric powder - 1 tbs
Pure Ghee - 1 tbs

Method:

Wash dal and in a pressure cooker add dal, 4 cups water, 1 tbs turmeric powder, salt to taste and let it boil till 3 whistles.

In a pan, heat ghee, add cumin, chopped chillies and garlic. Saute for 1 minute.
Now add chopped onion and saute for 2 minutes and then add chopped tomatoes. Saute for 1 minute.
What gives this dal its Dhaba flavor is , the crispiness of onion and tomatoes, so you don't have to fry the tempering for long.

Now add, boiled dal to the onion tomato tempering and its done.

Garnish with chopped green coriander.
It goes best with Jeera Rice..
